A single red wine barrel sat with a Cherry
Amber ale fermented with Brettanomyces and Pedicoccus for years, undisturbed, slumbering. When discovered, we were awed with notes of cherry custard and fine, wine-like acidity.
The Depths is the definition of small batch, and a barrel of such wonder may never rise from that wondrous abyss again.
